Toast the Spices
- Heat a dry pan on low heat. Add cumin seeds and coriander seeds. Stir for 1 to 2 minutes until they smell fragrant. Let them cool.
Grind the Spices
- Grind the toasted cumin and coriander seeds into a fine powder. Add fenugreek powder and sumac. Mix well.
Prepare the Garlic Base
- In a bowl, add minced garlic, sea salt, black pepper, and chili flakes. Mix gently.
Add Oil and Lemon
- Slowly pour in the olive oil while stirring. Then add lemon juice and mix until smooth.
Combine Spices
- Add the ground spice mix to the bowl. Stir well so everything blends evenly.
Adjust Consistency
- Add warm water little by little until the sauce becomes smooth and pourable.
Finish the Sauce
- Mix in chopped parsley and smoked paprika if using.
Rest before Serving
- Let the sauce sit for 10 to 15 minutes so flavors come together.
