Ingredients
  

  • 4 medium garlic cloves minced
  • ½ teaspoon sea salt
  • 2 tablespoons warm water add more if needed
  • 2 tablespoons cumin seeds
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon fenugreek powder
  • ¼ cup extra virgin olive oil
  • ½ teaspoon hot chili flakes adjust to taste
  • tablespoons coriander seeds
  • ½ teaspoon sumac
  • 1 tablespoon fresh parsley chopped
  • ½ teaspoon smoked paprika optional

Method
 

Toast the Spices
  1. Heat a dry pan on low heat. Add cumin seeds and coriander seeds. Stir for 1 to 2 minutes until they smell fragrant. Let them cool.
Grind the Spices
  1. Grind the toasted cumin and coriander seeds into a fine powder. Add fenugreek powder and sumac. Mix well.
Prepare the Garlic Base
  1. In a bowl, add minced garlic, sea salt, black pepper, and chili flakes. Mix gently.
Add Oil and Lemon
  1. Slowly pour in the olive oil while stirring. Then add lemon juice and mix until smooth.
Combine Spices
  1. Add the ground spice mix to the bowl. Stir well so everything blends evenly.
Adjust Consistency
  1. Add warm water little by little until the sauce becomes smooth and pourable.
Finish the Sauce
  1. Mix in chopped parsley and smoked paprika if using.
Rest before Serving
  1. Let the sauce sit for 10 to 15 minutes so flavors come together.
