- Preheat your oven to 350°F (175°C).
- Grease the cake pan lightly.
- In a large bowl, whisk together flour, sugar, baking soda, cinnamon, and salt.
- Add grated carrots, oil, eggs, and vanilla extract. Mix well.
- Stir in walnuts and raisins if using.
- Pour the batter into the prepared cake pan.
- Bake for 40 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool on a rack before frosting.
