  • Vegetable oil – ¾ cup
  • Buttermilk – ¾ cup
  • Vanilla extract – 2 tsp
  • Baking soda – 2 tsp
  • Ground cinnamon – 2 tsp
  • Salt – ¼ tsp
  • Carrots shredded – 2 cups
  • Pineapple with juice crushed – 1 can
  • Flaked coconut – 1 cup
  • Walnuts chopped – 1 cup
  • Raisins – 1 cup

Method
 

Prepare the Oven
  1. Preheat your oven to 350°F (180°C). Grease a baking pan lightly with oil.
Mix Dry Ingredients
  1. In a large bowl, add ingredients Flour, baking soda, cinnamon and salt. Mix everything well and keep aside.
Mix Wet Ingredients
  1. In another bowl, beat the eggs, add sugar and mix well. Add vegetable oil, buttermilk and vanilla extract. Mix until smooth.
Combine Wet and Dry
  1. Slowly add the dry ingredients into the wet mixture. Mix gently until everything is well combined.
Add Fruits and Nuts
  1. Now add shredded carrots, crushed pineapple with juice, raisins, flaked coconut, chopped walnuts. Mix gently so everything spreads evenly.
Bake
