Prepare the Oven
- Preheat your oven to 350°F (180°C). Grease a baking pan lightly with oil.
Mix Dry Ingredients
- In a large bowl, add ingredients Flour, baking soda, cinnamon and salt. Mix everything well and keep aside.
Mix Wet Ingredients
- In another bowl, beat the eggs, add sugar and mix well. Add vegetable oil, buttermilk and vanilla extract. Mix until smooth.
Combine Wet and Dry
- Slowly add the dry ingredients into the wet mixture. Mix gently until everything is well combined.
Add Fruits and Nuts
- Now add shredded carrots, crushed pineapple with juice, raisins, flaked coconut, chopped walnuts. Mix gently so everything spreads evenly.
Bake
- Pour the batter into the prepared pan. Bake for 40 to 45 minutes, or until a toothpick comes out clean.
Cool and Serve
- Let the cake cool completely. Slice and enjoy your soft and moist carrot cake.
