  • 2 bell peppers chopped
  • 1 pound penne pasta
  • 4 garlic cloves minced
  • 1 pound chicken thighs (diced0
  • Salt and pepper to taste
  • 2 stalks celery chopped
  • 1 pound smoked sausage sliced
  • 4 cups chicken broth
  • ΒΌ cup green onions chopped
  • 1 large yellow onion chopped
  • 2 tablespoons Cajun seasoning

Method
 

Cook the Pasta
  1. Boil pasta in salted water until just soft. Drain and set aside.
Cook the Sausage
  1. Heat a large pot on medium heat. Add sliced smoked sausage. Cook until lightly brown, then remove and set aside.
Cook the Chicken
  1. In the same pot, add diced chicken thighs. Sprinkle Cajun seasoning, salt, and pepper. Cook until the chicken is fully done.
Add Vegetables
