Ingredients
  

Cajun Seasoned Flour (Dry Mix)
  • Paprika – 2 tablespoons
  • All-purpose flour – 1 cup
  • Garlic powder – 1 tablespoon
  • Onion powder – 1 tablespoon
  • Salt – 1 tablespoon
  • Cayenne pepper – ½ tablespoon
  • Dry mustard – 1 tablespoon
  • Black pepper ground – 1 tablespoon
  • Celery salt – ½ tablespoon
  • Dried thyme – ½ teaspoon
Chicken Bites Ingredients
  • Boneless chicken breast halves – 4
  • Eggs – 3
  • Lemon juice – ⅓ cup
  • Minced garlic cloves – 3
  • Cajun seasoning – 1½ tablespoons
  • Tabasco sauce – 2 tablespoons
  • Worcestershire sauce – 2 tablespoons
  • Vinegar – 1 tablespoon
  • Cajun seasoned flour – 1 cup

Method
 

Prepare the Cajun Flour
  1. In a large bowl, mix all Cajun seasoned flour ingredients well. Set aside.
Prepare the Chicken Marinade
  1. In another bowl, whisk, Eggs, Lemon, juice, Garlic, Cajun seasoning, Tabasco sauce, Worcestershire sauce and Vinegar Mix until smooth.
Marinate the Chicken
  1. Add chicken cubes into the marinade. Mix well so every piece is coated. Let it rest for 20 to 30 minutes for better flavor.
Coat the Chicken
  1. Remove chicken from the marinade one piece at a time. Roll each piece in the Cajun seasoned flour until fully coated.
Cook the Chicken
  1. Oven Method (Roasted Style): Preheat oven to 400°F (200°C). Place chicken on a lightly greased baking tray. Bake for 18 to 22 minutes, flipping once. Chicken should be golden and fully cooked.
  2. OR Pan Method: Heat a little oil in a pan on medium heat. Cook chicken for 4 to 5 minutes per side. Cook until golden and juicy inside.
