Ingredients
  

For the Bowl:
  • 4 cups kale chopped (stems removed)
  • 1 can 15 oz chickpeas, drained and rinsed
  • 2 ripe avocados sliced
  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes halved
  • 2 medium sweet potatoes cubed (about 3 cups)
  • Salt to taste
  • Black pepper to taste
For the Quinoa
  • 2 cups vegetable broth or water
  • 1 cup quinoa uncooked
For the Tahini Dressing:
  • 1 clove garlic minced
  • ¼ cup tahini
  • Pinch of salt
  • 2 tablespoons fresh lemon juice
  • 2 –3 tablespoons water to thin
Optional Toppings:
  • Red pepper flakes
  • Fresh herbs cilantro or parsley
  • Hemp seeds
  • Microgreens

Method
 

Cook the Quinoa
  1. Rinse the quinoa under clean water. Add quinoa and vegetable broth (or water) to a pot. Bring to a boil, then cover and cook on low heat for 12 to 15 minutes. When done, fluff with a fork and set aside.
Roast Sweet Potatoes & Chickpeas
  1. Preheat the oven to 400°F (200°C). Place sweet potatoes and chickpeas on a baking tray. Drizzle with olive oil and sprinkle salt and pepper. Roast for 25 to 30 minutes, until golden and soft.
Prepare the Kale
  1. Wash and chop the kale. Place it in a bowl and gently massage with a small pinch of salt for 1 minute. This makes the kale softer and easier to eat.
Make the Tahini Dressing
  1. In a small bowl, mix tahini, lemon juice, garlic, and salt. Add water slowly and stir until smooth and creamy.
Assemble the Bowl
  1. Add quinoa to serving bowls. Top with roasted sweet potatoes, chickpeas, kale, cherry tomatoes, and avocado slices. Drizzle with tahini dressing.
Add Optional Toppings
  1. Sprinkle hemp seeds, fresh herbs, microgreens, or red pepper flakes on top.
