Ingredients
  

  • 4 lbs fresh tomatoes
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 4 cups chicken or vegetable broth
  • 2 tablespoons olive oil
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoons lemon juice per jar

Method
 

  1. Start by washing and chopping the tomatoes.
  2. In a large pot, heat olive oil and sauté onion and garlic until soft.
  3. Add tomatoes, broth, sugar, salt, and pepper. Simmer for 30 minutes.
  4. Blend the mixture until smooth using a blender or immersion blender.
  5. Sterilize canning jars and lids.
  6. Add lemon juice to each jar (2 tablespoons per jar).
  7. Pour the hot soup into the jars, leaving 1/2-inch headspace.
  8. Seal the jars with lids and bands.
  9. Process in a canning pot or pressure canner as per the instructions.
