Method
- Start by washing and chopping the tomatoes.
- In a large pot, heat olive oil and sauté onion and garlic until soft.
- Add tomatoes, broth, sugar, salt, and pepper. Simmer for 30 minutes.
- Blend the mixture until smooth using a blender or immersion blender.
- Sterilize canning jars and lids.
- Add lemon juice to each jar (2 tablespoons per jar).
- Pour the hot soup into the jars, leaving 1/2-inch headspace.
- Seal the jars with lids and bands.
- Process in a canning pot or pressure canner as per the instructions.
