Ingredients
  

Wet Ingredients
  • 1 stick ½ cup butter, room temperature
  • 1 egg
  • 1 cup light brown sugar
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • ¼ tsp almond extract
  • 2 tbsp milk
Dry Ingredients
  • 1 cup all-purpose flour
  • ¾ cup whole oats
  • ¼ cup oats ground (food processor)
  • 1 tsp baking powder
  • ½ tsp salt
  • ¼ tsp baking soda
Tropical Mix-ins
  • ½ cup dried pineapple chopped
  • 1 cup sweetened coconut flakes
  • ½ cup chopped pecans

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) Line baking sheets with parchment paper.
Cream Butter & Sugars
  1. Beat butter, brown sugar and granulated sugar until light and fluffy. Mix in egg, vanilla, almond extract and milk.
Combine Dry Ingredients
  1. In a separate bowl, whisk, Flour, Whole oats, Ground oats, Baking powder, Baking soda and Salt.
Make the Dough
  1. Gradually add dry ingredients to the wet mixture. Fold in pineapple, coconut and pecans.
Chill (Recommended)
  1. Chill dough 20 to 30 minutes for thicker cookies.
Bake
  1. Scoop 2 tbsp dough per cookie. Bake for 12 to 15 minutes until the edges are golden.
Cool
  1. Let cookies rest on the sheet 5 minutes before transferring to a rack.
