Cook the Bacon
- In a large pot, cook the bacon until crispy. Remove it and set aside. Leave a little bacon fat in the pot.
Melt Butter and Cook Onion
- Add butter to the same pot. Add diced onion and cook for 2to 3 minutes until soft.
Add Garlic
- Add minced garlic and cook for 30 seconds until fragrant.
Thicken
- Sprinkle flour into the pot and stir well. Cook for 1 minute to remove raw flour taste.
Add Potatoes and Broth
- Add cubed potatoes and chicken broth. Stir well and bring to a boil.
Simmer until Soft
- Lower heat and simmer for 15 to 20 minutes until potatoes are very soft.
Mash Slightly
- Gently mash some potatoes in the pot to make the soup creamy.
Add Cream and Dairy
- Stir in heavy cream, cheddar cheese, and sour cream until smooth.
Season the Soup
- Add salt and pepper to taste. Simmer for 5 more minutes.
Serve and Garnish
- Pour into bowls and top with bacon and green onions.
